Berry Cobblers!

So, my sis bought some strawberries, blackberries and blueberries to make smoothie couple of weeks back. We used a portion and the berries were left sitting in the fridge since. So knowing that they’d go bad soon, I decided to google what easy recipes there are for berries.

And that’s how I end up baking cobblers. I found a recipe on (heh) that has all the ingredients I have on hand. Cool~

2 cups berries of choice
2 tablespoons sugar (I prefer a mix of brown and white)
3 1/2 tablespoon orange juice or 1/2 of a lemon (juice)
1/2 cup flour
1/2 teaspoon baking soda
Pinch of salt
1/3 cup melted butter or 1/4 cup canola oil
1/3 cup sugar
1/2 beaten egg

1. Mix berries, juice and sugar.
2. Mix all the other ingredients together, with flour being the last.
3. Pour berries first into baking dish of your choice, then smother the batter mix over.
4. Bake until crust is golden brown.

First up, made Blackberry Cobbler. My batter turns out nice, spongecake-like texture and taste. I read it’s supposed to be crumbly or biscuit-y. Maybe cuz I used canola oil instead of butter? I don’t know, I have no knowledge about the scientific aspects of cooking and baking. But the blackberries were sour and bitter, so we had to just eat the top portion (though the sauce was quite nice).

Then I made Strawberry Cobbler and this was way nicer! Strawberries were sweet~

If I’m ever making cobblers again, I need to stick with strawberries and have some vanilla ice-cream ready.

Not sure what the calorie count is, have yet to check. But with the portion I ate, might be between 200-300 kcal?

Now to prepare Roasted Broccoli for dinner….
