Vegan Flourless Chocolate Cookies

Back with another weekend treat. Quick search on the internet and I found the right choc chip cookies recipe to use~ so awesome how simple this recipe is!

I made two different batches. One is using cocoa, the other chocolate chips. The one with cocoa yields a delicious fudgy cookie whilst the one with chocolate chips gets me a crisper cookie. Both are delicious and I don’t feel guilty devouring them, muahahaha!

Ingredients (recipe adapted from chocolatecoveredkatie.com):
Serving size: 6 cookies
1/2 cup rolled oats
1 tablespoon dark cocoa powder (Valrhona)
1 1/2 tablespoons brown sugar
1/2 (slightly more) tablespoon granulated sugar
Pinch of salt
1/4 teaspoon baking soda
1 tablespoon canola oil or melted margarine
1-2 tablespoons milk of choice or water (depending on what texture you wish to get)

Directions:
Blend all the dry ingredients in a blender or food processor till resemble flour texture.
Then stir in oil and milk to get a sticky mixture if looking for fudgy texture. If not, it should be dry enough to use a cookie cutter. Because of baking soda, cookies will spread so make sure you space your balls of dough apart.
Bake. Katie (original poster) said it took 6 minutes to bake but in my oven, it took about 10-15 mins. So just have to watch.

Same recipe as above, omitting cocoa powder. Add the chocolate chips in last. For this mixture, it was quite runny so these cookies were crisper than their cousins.

Yeay for healthier but still yummy treats!
